Pumpkin Protein Pudding
Pumpkin Protein Pudding
Made the most YUMMY snack for myself today!
1/2 cup fresh baked pumpkin puree
1/2 banana smashed
1 scoop vanilla pp
1 T crunchy almond butter
Add water and mix to a creamy consistency and sprinkle w/ cinnamon/ pumpkin pie spice and 1 Splenda or any sweetener would work. i placed it in the freezer for 10 minutes to cool. WAS DELICIOUS!!!

Obstacle in m way :(
Meals today:
Meal 1: 6 egg whites, 1 whole egg, 1/4 cup steel cut oats/ 1/2 cup blueberries, 10 raw almonds.
Meal 2: 1/2 medium tomato, 1 can tuna.
Meal 3: 1 scoop protein powder w/ water, 1 apple.
Meal 4: Baby spinach w/ grilled chicken, walnuts, mango, avocado w/ balsalmic vinegar, small vegetarian lentil soup.
Meal 5: 2 cups greens beans, 4.5 oz Tilapia.
Meal 6: 1 scoop casein, 1 tsp almond butter, 1 tbsp pure pumpkin, 1/2 Fage greek yogurt w/ water.

Marvelous Meatballs! Quick and Easy
1 Package Extra Lean Ground Turkey
1 whole OMEGA 3 brown egg
Sprinkle of Ms. Dash
Large handful raw baby spinach chopped in mini processor
Sprinkle of Adobo Light Low Sodium
1/2 cup onions
1/2 cup tri colored peppers
Mix it all together and make small rounded meatballs. Cook on low flame covered with about 1/4 cup water in stirfry pan. Add meatballs to brown rice, whole grain pasta or whatever side of your choice.

Egg White/Cottage Cheese Galore Recipe
6 egg whites
2 tablespoons cottage cheese
Cinnamon/Nutmeg/1Splenda or Stevia
1 tablespoons old fashioned oatmeal
10 raw almonds
Cook on stove and sramble up like you would eggs and Enjoy!

My Rollercoaster through the ups and downs-LITERALLY!
Here's a quick explanation of how my ups and downs were so you can understand ESPECIALLY the other women knowing how BC effects our hormones so you could imagine where my mind was plus I was out partying alot and drinking and doing all that other fun stuff you can imagine so that didn't help with my physique at all.
2000-180-185lbs
2002-Lost all the weight and went down to a healthy 130lbs
2003-Maintained my weight and worked out and started researching about eating clean
May 1st, 2005-Competed in my first Figure Comp at 119lbs came in 8th! was ok with the results but you will find out below why my body didn't reach it's full potential during my prep
A few weeks after comp-Found out I was 4 months pregnant with my first daughter and had no idea while prepping for comp. I thought the spotting from my period was all part of the "prep" and dieting. I was put on bedrest because of oxygen problems with my baby girl and she was not growing at a consistent rate and developed thyroid disease the worst and gained 80lbs.
November 9th, 2005- Gave birth to the most amazing little girl Jada! 6lbs 3oz HEALTHY, beautiful and full term.
November 9th, 2005- 195lbs
January 1, 2006- 190lbs still feeling horrible, exhausted, sadness from my thyroid!
January 1, 2006- Began training EVERY morning and eating as clean as possible.
January 2007- Lost all the baby weight!!!!!!!!!!!!!!!!!!
Years in Between-Continued learning everything I could and maintained but had no desire to compete again.
2009- Miscarriage :( was very sad to lost my baby at 3 months pregnant, 13 weeks to be exact her name was going to be Giana Rose but continued my journey and refused to let it bring me down.
June 24th, 2009-Gave birth to my 2nd healthy and beautiful baby girl Chloe! 5lbs 11oz full term.
July 2009- all weight gone! Gained 22lbs this pregnancy and was very smart at eating healthy.
Now this brings me to where I am today, 2011. 11 weeks out and VERY consistent with my life and everyone and everything that is a part of it. I feel blessed to be able to share my journey with anyone who wants to listen and just hoping I can reach out to another mom who feels like she can never get there.

Family Comes First
Wednesday was my rest day which I loved and had a great day with my 2 princesses and hubby but that all screached to a halt in the evening when we were hit with some news that I would rather not discuss in my blog at this moment but will eventually. For now lets just say it was family matters and resulted in a very sad and angry and speechless time.
Family always come first I know that but I did have to remind myself that and realize that it was okay to miss my leg and ab workout to be with my hubby and his support system. I'm very hard on myself sometimes which I believe is good and gives me that oomf to fight and go on.
I love who I am today and love how motivated and fun I make my life.
I got through it and learned a lesson! It's OKAY! and FAMILY COMES FIRST!!!!!!!!!!

Egg White Ice Cream with Protein Peanut Butter Cups!
6 egg white beaten, 1 scoop whey (any flavor), 2 splenda or Stevia. Freeze for about 4 hrs. In a blender combine 1 scoop chocolate whey (I used Casein), 1 tbsp unsweetened cocoa, 1 tbsp peanut butter, 4oz water...pour this into muffin tins about 3/4 each makes about 6-8 and freeze them! Top them on the mixture they taste like Reeses PB Cups!!!

My Healthy Alternatives!
Some people ask me how I eat healthy and what I do when I cook so I wanted to make a small note on some food alternatives I make while eating and making my food decisions.
Mayonnaise- Fage 0% Yogurt
Sour Cream- Fage 0% Yogurt
Butter or Margarine White Baking- Unsweetened Applesauce
Oil While Baking- Unsweetened Applesauce
Milk- Unsweetened Almond Milk or Coconut Milk
Sugar- Stevia or Splenda (I know there is controversy with Splenda but I still like it because the studies are not concrete and I like it)
Honey Mustard- 1 tsp natural honey or agave nectar mxed with mustard or honey dijon mustard.
Cheese- Whipped Low Fat Cottage Cheese (on baked ziti, lasagna etc)
Seasoning- Ms. Dash products.
